Jawar Dosa / Pearl Millet Pancake (Chilla)
Ingredients:

Jawar / Pearl Millet Flour (Aata/Pith) – 2 cups

Rava / Suji / Semolina – ½ cup

Curd / Dahi – ⅓ cup (if sour, take only ½ cup)

Beetroot – ½ cup, grated
-
Carrot – ½ cup, grated
-
Cilantro / Kothimbir – 2 tbsp, finely chopped
-
Green Chilies – 2, finely chopped (or as per taste)
-
Salt – to taste

Water – as required
Optional: Crush green chilies with 1 tsp cumin seeds and a pinch of salt for extra flavor before adding to the batter.
Preparation Method:

In a mixing bowl, add jawar flour, rava/ suji, grated beetroot, carrot, cilantro/ kothimbir, and salt.

Whisk curd with a little water, then slowly mix it into the jawar mixture.

Add water gradually to make a semi-liquid batter (like dosa/chilla consistency).

Add chopped (or crushed) green chilies into the batter.

Rest the batter for 10 minutes.
Cooking:

Heat a griddle/tawa (preferably cast iron).

Once hot, pour one ladle of batter in the center and spread it lightly.

Cover with a lid and cook for 2 minutes.

Flip and cook the other side for about 1 minute.

Remove when golden and crisp.
Serve hot with:

Tomato chutney / sauce

Groundnut/ Peanut (Shengdana) chutney
