Jawar Dosa / Pearl Millet Pancake (Chilla)

Ingredients:

  1. Jawar / Pearl Millet Flour (Aata/Pith) – 2 cups

  2. Rava / Suji / Semolina – ½ cup

  3. Curd / Dahi – ⅓ cup (if sour, take only ½ cup)

  4. Beetroot – ½ cup, grated

  5. Carrot – ½ cup, grated

  6. Cilantro / Kothimbir – 2 tbsp, finely chopped

  7. Green Chilies – 2, finely chopped (or as per taste)

  8. Salt – to taste

  9. Water – as required

Optional: Crush green chilies with 1 tsp cumin seeds and a pinch of salt for extra flavor before adding to the batter.

Preparation Method:

  1. In a mixing bowl, add jawar flour, rava/ suji, grated beetroot, carrot, cilantro/ kothimbir, and salt.

  2. Whisk curd with a little water, then slowly mix it into the jawar mixture.

  3. Add water gradually to make a semi-liquid batter (like dosa/chilla consistency).

  4. Add chopped (or crushed) green chilies into the batter.

  5. Rest the batter for 10 minutes.

Cooking:

  1. Heat a griddle/tawa (preferably cast iron).

  2. Once hot, pour one ladle of batter in the center and spread it lightly.

  3. Cover with a lid and cook for 2 minutes.

  4. Flip and cook the other side for about 1 minute.

  5. Remove when golden and crisp.

Serve hot with:

  • Green coconut chutney 

  • Tomato chutney / sauce 

  • Groundnut/ Peanut (Shengdana) chutney 

It  is   a very good  option for  breakfast, lunch  or  dinner  and  easy  to  make.
