 Lal Bhopla Bhaji / Kaddu ki Sabji/ Red Pumpkin Sabji

Ingredients : 
1. Red Pumpkin 250 gms.
2. One medium size onion finely chopped
3. one green chilli
4. red chilli powder
5. 1 teaspoon turmeric powder
6. salt as per taste

For Seasoning/ Tadka:
1. Oil
2. Mustard seeds
3. Dhane/ Coriander seeds
4. Jeera/ Cumin seeds
5. Badisof/ Fennel Seeds
6. Methi Dana/ Fenugreek Seeds
7. Curry Leaves

Procedure : 

1.Wash the pumpkin, remove seeds and skin of the pumpkin. Chopped pumpkin into the small pieces and keep aside.

2. Heat a Kadai pour 1 tablespoon oil. When oil becomes hot add mustard seeds when mustard seeds start to crackle add 1 spoon jeera/ cumin seeds, one teaspoon dhane/ coriander seeds, 1 teaspoon Badisof/fennel seeds, 1teaspoon methi dana/fenugreek seeds and 6-7 curry leaves fry for 1 minute and add one slit green chilli. Add chopped onion and saute till it turns pink and soft. 

3.Add chopped pumpkin, turmeric powder, red chilli powder and salt as per taste. 

4.Put a lid on the Kadai after 5 min check if pumpkin pieces become soft.

when pumpkin pieces become soft, the sabji is ready to serve with roti/chapati. 

This is a very good sabji which have five flavours of seasoning and Pumpkin is also good for health. Red pumpkin contains vitamin K which benefits your heart and bones.

Note: Green Chilli gives a little spicy flavour to the sabji... if you don't like it then you can skip the green chilli.
